Friday Grab Bag: Cookies and More!

Funny story to start your Friday … yesterday I sat down to write a Thinking Out Loud Thursday post to link up with one of my favorite bloggers, Amanda @Running with Spoons.  However, if you have ever been on Spoons, you know Amanda loves to bake and her site is full of delicious recipes!  I must have been hungry because I got so distracted looking up yummy things to bake that I completely forgot to finish my post 🙂  But these little treats were worth it!gfbancc cookies3 I love to bake, but everything from Grandma’s cookbook adds 10 lbs to my waistline just by looking at it (but it’s oooooh so good!) so I have recently cut back on a lot of my baking … bathing suit season is upon us after all!

And banana bread is one of my absolute favorites!  So when I found Amanda’s Chocolate Chip Banana Bread Oatmeal Cookie recipe (which happens be vegan) I decided I’d give it a try.  I used gluten-free flour and gluten-free Rolled Oats for this particular experiment.


  • 1.5 cup GF multi purpose flour
  • 1 cup GF rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp coconut oil, melted
  • 2 ripe bananas (about 1 cup)
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 1/2 cup mini chocolate chips

I doubled the recipe because, if they turned out tasty, 12 cookies weren’t going to last long with my family of 5!

I preheated the oven to 350*

Spooned them out onto a cookie sheet

Waited impatiently for 12-14 minutes

And barely let them cool before handing them out to the kids.

Bite-sized deliciousness perfect for summer 🙂  Speaking of summer, if you follow us on Instagram {@javaandsole}, you saw my single blooming lily from last week.  And as of yesterday, almost ALL of my lilies have bloomed!  Love my flowers!


I also love watching my kids enjoy summer … all three kids are rocking tennis camp 🙂


But when you spend the entire morning at tennis camp then rush home to grab lunch before hurrying off to swim lessons … coffee to go {in the largest cup I own} becomes imperative!

And I love starting my weekend off with 4 sweaty miles with these girls!

      Susie – the oatmeal definitely gives it a different taste than my original banana bread recipe. But the kids are enjoying them, so I will definitely make them again. Let me know how yours turn out please 🙂

  3. I love that you made them GF, Brandi! And I’m glad that you and your family enjoyed them 🙂 I’d have to say that the extra long days are what I love most about the summer. I just feel so much more full of energy when it’s bright out so much longer!
